I am wondering about this because i came from the country which is so rich with exotic fruits and vegetables i am curious what is that uncommon vegetables from your country.
Ok. Start from mine.

Leaves and fruits of Gnetum gnemon also known as melinjo. We usually make sour soup from this. Super tasty.

Archidendron pauciflorum also known as jengkol. It smell so strong. Poeple say it tastes like potato. Some people believe it can cure cancer. Who knows?
